Winemaking technique The grapes are harvested by hand and spread in shallow boxes. This means that they can be carefully selected before being gently pressed. The must is then left to ferment at a controlled temperature of 16/18 °C. Only a small part of the wine thus obtained after this phase is then aged in barriques, and then passes on to the classical and characterizing phase of refermentation in the bottle. After 24 months of contact with the yeasts, it is then degorged and three months later put on the market.
Organoleptic profile Straw colour with greenish tints. Intense aroma with a hint of honey and vanilla.
Persistent and lively acidity. Perlage: fine and persistent
Percentage alcohol 13% Vol | Sugar 7 gr/l | Acidity 6.5 gr/l
Food pairing Excellent as an aperitif with starters, and is also perfect for accompanying the whole meal. It should be served at around 7/9 °C in good-sized thin-glassed wine glasses.
